Being the youngest in the family means a lot. As I grew up without my siblings because they have to go to school, I have to be behind and be in the cares of my mom. I grew up with her in the kitchen, seeing everything she cooked for us, and constantly asking what are the ingredients that makes a good recipe. She will always say that one food can taste differently from one another by just using different types of salting method. She says the person who knows more how to salt will always have the best product at the end of the day.
While I was taking my main course in college, I am simultaneously studying culinary arts in a distant program. After graduating, I took up the 4 weeks cooking hands on training. I only have one goal, to know if my mom is right about salting.
And indeed, it was true. Salting food can result to different products and can give different taste. It all depends upon the duration you salted your food, the time you season your food with salt and what kind of salt did you use. Nowadays we have different salts like Kosher, Himalayan, Hawaiian Salt, Pan Slat, Camargue, Onion Salt, Chili Salt and Iodized Salt.
Many of us grew with the misconception that salt is bad for our health. Well of course, that is true, if you will make salt your food. Seriously, we all know that too much is always bad, so too much salt being bad is already a given.
But did you know that actually need salt in our body? When I was still in grade school, I was a member of the Boy Scout and we ofter go mountain hiking and do endurance trainings. Our headmaster always require us to bring salt in our pocket that we nibble from time to time. Doing that will prevent us from collapsing due to dehydration.
Salt is known to dehydrate the food matters that's why we used it in preserving foods. But actually, it works differently in our body. Salt absorbs water in the body that it will store for future use. Salt contains electrolytes and serves as the energy giving system of in our body. The power drinks like Gatorade and Powerade both have salts.
Iodized salt is actually recommended for everyday use. It supplies our body with enough iodine. It also prevents the outbreak and formation of internal cyst like goiter.
Salt may have good and bad effects, but at the end of the day, the food that is salted properly will stand out. It only shows that food was salted properly. It's not less, its not too much. Just enough.
